Grilled Honey Lemon Chicken Salad – A delicious and healthy grilled chicken salad with a sweet and zesty honey lemon dressing, is perfect for a light lunch or dinner and can be ready in a matter of minutes. Grilling the chicken gives the salad a savory and smoky flavor that pairs perfectly with the honey’s sweetness and the lemon’s tartness. - (450g) skinless, chicken breast cut into cubes
- 4 cups Cos lettuce leaves, washed and dried
- 1 red onion sliced
- 1/2 cup shaved parmesan
- Lime slices
Marinade
- 3 tablespoons oil
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- 1 teaspoon cayenne pepper
- 1 teaspoon salt
- 1 teaspoon paprika
- 1/2 teaspoon cracked pepper or to taste
Lemon Honey sauce
- Juice and zest of half a lemon (1/4 cup freshly squeezed lemon juice)
- 1 tablespoon honey
- 2 teaspoons garlic, minced
- 1/2 cup of butter, melted
- 2 tablespoons fresh chopped spring onion
- 1 tablespoon chilli sauce
DIRECTIONS
1. To make the grilled chicken salad: Combine all the marinade ingredients in a large bowl.
2. Add the diced chicken to the marinade in the bowl; marinate the chicken for 15-30 minutes (or more if you have time).
3. In the meantime, arrange salad, red onion, and parmesan in a large bowl. In a small bowl, combine the ingredients for the lemon honey sauce.
4. Once the chicken is ready, heat one tablespoon of oil in a grill pan over medium-high heat. Grill chicken on all sides until browned and thoroughly cooked through. Brush the grilled chicken with the honey lemon sauce.
5. Arrange grilled chicken on top of the salad. Drizzle the grilled chicken salad with more of the honey lemon dressing or ranch sauce. Serve with lime slices
