Cauliflower Fried Rice

How to make cauliflower rice 

  1. Remove the cauliflower florets from the head of cauliflower.
  2. Grate the cauliflower florets using either the grater attachment on your food processor or a box grater.

How to make cauliflower fried rice 

1/2 medium cauliflower  – cored, coarsely chopped (approx 500g)

2 extra large eggs

2 tbsp olive oil 

2 cloves garlic

1 tbsp grated ginger

3 spring onions

100g snow peas – trimmed, sliced thinly, lengthwise

1 medium carrot – peeled, sliced thinly

2 tbsp salt reduced soy sauce

Once you’ve made the cauliflower rice, using a fork, whisk eggs in a bowl, pre heat  a large non stick frypan or wok on medium heat, add olive oil and egg, cook for 30 seconds or until set. Transfer to plate and chop into small pieces.

Add the garlic and ginger and sauté for 20 seconds on medium heat, then stir in the onions, carrots, snow peas and cook for 2 minutes.

Then stir in cauliflower rice, and soy sauce, stir fry for 2 minutes (don’t overcook as cauliflower rice is better al dente).
